I found this recipe here at Make It Perfect, they promised to be “THE BEST choc chip cookies ever EVER!” so I was keen to give them a go and they did not disappoint. Miss almost 12 was pretty keen to have a go at the new kitchen appliance when it arrived and I thought this recipe perfect for her to try. I did a few things slightly differently, my version is posted below.

The biscuits pictured were made in the Bellini Intelli before I had a Thermomix; I have made them again since having the TM as they are a good lunch box filler.
Choc Chip Cookies/Biscuits
125g Softened Butter
110g White Sugar
1/2tsp Vanilla Essence
260g Self Raising Flour
150g Chocolate Chips
Heat oven to 180c (or 350F)
Place butter, sugar and vanilla in bowl, cream together for 1 minute on Speed 3-4.
Add egg through hole in lid and continue mixing on same speed for an additional 30 seconds.
Roll a tablespoon of mixture into balls and slightly press onto trays, leave room for spreading.
Cook for 10 – 12 minutes in oven. Cool on wire rack when done.
Conversions for TM21 – Place sugar in bowl first on Speed 10 for 3 seconds, then add softened butter and proceed for 30 seconds on speed 4.
Add egg, speed 4, 30 seconds.
Add Flour & Salt, mix on speed 3, 30 seconds, (check to make sure all is combined, may need longer).
Add choc chips and pulse for 3 second intervals on speed 1 until combined
Cook in oven.
Like the original recipe which used Reese’s Pieces, we like to add M&M’s, marshmallows and other lollies (candy) to our biscuits, what’s your favourite thing to add?
