Well it’s Biscuit Tuesday in our house again, when I try to make a batch of ‘biscuits’ or lunchbox treats with my two year old. This week was a dismal failure, Miss 2 insisted on honey crackles which are made with cornflakes and she wanted to use crunchy nut cornflakes. That means nuts and nuts are a no go at Miss 12’s school. Apart from the fact that we have no lunch snacks for the rest of the week (being the dismal failure part) they are super tasty so here is my recipe!

Honey Crackles

Ingredients – Makes 12

125g Butter

2 Tablespoons Honey

100g Sugar

50g Desiccated Coconut

160g Cornflakes (best not to use crunchy nut if for school)

20g sultanas

20g mini choc chips


Pre heat oven to 180c

Place sugar, butter, honey & coconut in bowl and cook at 100c for 6 minutes on speed 3

Add cornflakes and sultanas, Mix on Reverse Speed tm reverse for 15 seconds, speed 3

Spoon into cup cake wrappers, sprinkle with choc chips and place in oven for 5 – 10 minutes until golden.

Cool on the benchtop until room temperature and then place in fridge for 20 mins

to set. Then Enjoy!
